Downriver Grill's Chicken Fajita Nachos

Ingredients:

A 5-6 oz      Boneless/skinless Chicken breast
1/2 cup    Enchilada sauce
1 can       Black Beans
2             Limes squeezed
1 lg          Red pepper, cleaned, fire roasted an sliced
1 lg          Tomato chopped
2-3 stalks Green onion
1/8 tbls     Cilantro
1/4 cup     Low fat sour cream
1/4 cup     Hickory smoked cheddar
1/4 cup     Low fat mozzarella
2 hand-fulls of corn tortilla chips
salt to taste
 
1.Bake chicken in 2/3 of enchilada sauce (set the rest aside) until chicken's internal temp is 165
 
2.Dice chicken and saute with black beans, red peppers, remaining enchilada sauce, lime juice and salt.
 
3.melt cheese over chips
 
4.pour chicken and bean mix over chips
 
5.garnish with sour cream, cilantro, onion and tomato
