2004-2005 Inland Northwest Healthy Nacho Recipe Contest Winner
Jamie’s Severson’s 3-2-1 Nachos with Mango Salsa and Sweet Poppy Seed Drizzle

With 3 beans, 2 cheeses, 1 meat (chicken) and a sweet mango kick, these easy-to-make nachos are sure to be a crowd pleaser!
Ingredients:
1 bag of tortilla chips (yellow, white or multi-colored)
1/2 cup of black beans
1/2 cup of pinto beans
1 cup of white beans
1 avocado cubed
1/2 cup of chopped red onion
1 cup of cooked and diced chicken
1 cup of smoked cheddar cheese
1 cup of Monterey Jack cheese
1 cup of store bought salsa (mild, medium or hot depending on preference)
1/4 cup of diced fresh, ripe mango
1/4 cup of store bought poppy seed dressing
2 Tbsp. low-fat sour cream
Directions:
Heat oven to 375 degrees. On a heat-safe platter, disperse half of the tortilla chips and sprinkle with 1/4 cup of black beans, 1/4 cup of pinto beans, 1/2 cup of white beans, 1/2 of the avocado, 1/4 cup of red onion, 1/2 cup of chicken, 1/2 cup of each of the cheeses.
Mix the mango into the salsa and sprinkle half the mixture over the chips. Layer the second half of the bag of chips on top and repeat the process.
Put the nachos in the oven and bake until the cheese melts, checking periodically (about 8-10 minutes depending on the oven). After the cheese has melted and the nachos have been removed from the oven, drizzle poppy seed dressing over the nachos and top them off with sour cream. Enjoy!
